Prepare Tamarind juice by soaking 1 tbsp of tamarind into 1 cup of hot water. After 15 minutes stain it with a sieve.
Add toor daal and mixed vegetables(onion, tomato, carrot, french beans) into the pressure cooker and put 2 glasses of water. Add all the spices and cover the lid. Wait for 3-4 whistles on high flame.
In a separate pan, heat oil. Add mustard seeds until they crack. Then add curry leaves and powdered hing.
Open the lid of the cooker and mash vegetables with a ladle. Add this mixture to the pan. And cook for 10 minutes. Then add tamarind juice. Your sambar is ready to be served with Idli, dosa or rice.
