Khaman Dhokla is one of the famous snack dish from Gujrati cuisine. It is made from gram flour also known as besan. You can enjoy this dish in any season and it is very easy to prepare. Just follow the given step by step instructions and your fluffy, soft, spongy, and delicious khaman dhokla will be ready in minutes.

Ingredients for batter

 

  1. Besan – 1 Cup
  2. Semolina (Suji) – 1 Tablespoon
  3. Turmeric – ¼ teaspoon
  4. Sugar – 1 teaspoon
  5. Salt – ¼ teaspoon
  6. Lemon Juice – 1 tablespoon
  7. Cooking Oil – 1 Tablespoon
  8. Green Chili – Paste – 1 Teaspoon
  9. Water – 1 Cup
  10. Eno (Fruit Salt) – 1 teaspoon

 

Ingredients to Temper

  1. Cooking Oil – 1 Tablespoon
  2. Mustard Seeds – 1 teaspoon
  3. Hing (asafetida) – 1/8 teaspoon
  4. Curry Leaves – 1 Sprig
  5. Green Chilies – 2 Slit
  6. Sugar – 2 Tablespoons
  7. Salt – ¼ teaspoon
  8. Water – 1 Cup

Instructions for Khaman Dhokla Recipe

Instructions For batter

  1. Take water in a bowl and add ginger and green chili paste to it.
  2. Add cooking oil, salt, sugar, and lemon juice.
  3. Stir the mixture well to avoid any lumps. Keep it aside
  4. Sieve besan and turmeric in a fresh bowl.
  5. Add semolina to the same bowl and mix well.
  6. Now add the spiced mixture we prepared earlier to this bowl and mix well to avoid any lumps.
  7. Keep adding water slowly to reduce the thickness of the batter.
  8. Use a whisk to beat the batter for a minute. Use the whisk in one direction only.
  9. Greece the pan that can be used in an oven or a steamer.
  10. Now quickly add eno (Fruits salt) and one tablespoon water to the prepared batter and mix well.
  11. Add the batter to the greased pan and place it in an oven or steamer.
  12. If you are using an oven, heat the batter at 180 degree for 10 minutes.
  13. In case you are using a steamer, steam the batter for 20 minutes.
  14. After the given time, remove the pan from the oven or the steamer using kitchen gloves and leave it aside to cool down.

Instructions to Temper

  1. Add two tablespoon cooking oil to a fresh pan and heat it.
  2. Add mustard seeds to the same pan and wait for the seeds to crackle.
  3. Now add curry leaves and sliced green chilies to the mixture and wait until curry leaves turn crisp.
  4. Add salt, sugar, Hing, and water to the mixture. Now wait, until the mixture start boiling.
  5. Turn off the flame and leave it to cool down.
  6. To takeout the dhokla safely from the pan, put a plate on the top of the pan and quickly invert it.
  7. Give some gentle strokes to the back of the pan with a spoon and then slowly take the pan off the plate. Meanwhile, keeping checking if the dhokla has come down to the plate.
  8. Once done, cut the dhokla into desired pieces and slowly pour the tempering water all over.
  9. After 5 minutes, sprinkle the toasted sesame seeds and chopped coriander leaves.
  10. The khaman dhokla is ready to be served with red or green mint sauce.
